Quinoa Pilaf


Quinoa Pilaf – or how I wanna be fancy when I’m really not
– 1 cup quinoa – 200g
– 1 medium white onion – chopped
– 1 medium carot – chopped
– fresh flat leaf parsley /cilantro

Cooking quinoa might seem intimidating at least when considering this “don’t know how to pronounce it” name.
In fact it’s as easy as cooking any type of rice. So ditch your fears and play some music.

1. Rinse thoroughly to remove the bitter, earthy taste of saponin
2. Soak overnight in 2 cups of warm water + 2 Tbs lemon juice/yogurt
3. Rinse and strain the quinoa
4. Saute the onion 4-5 min. or until translucent (I do it in water – just enought to cover the bottom of the pot)
5. Add the carrot 3-4 min. (if needed add some more water just enough to keep the bottom of the pot wet)
6. Add quinoa and 2 cups water
7. Boil for 15 minutes on low heat
8. If you want to have a creamy texture let it sit for 5 more min. with the lid on to absorb the liquid otherwise strain the remaining liquid
9. Add LOVE, salt and freshly chopped parsley
10. Add cold pressed oil into your plate
