Now if this is too yellow for you (a.k.a. too much beta-carotene) please bear with me for one second … here . I’ve added some dill. Much better right? (Andrei you do not need to answer this question)
– 400g new carrots (~2 bunches x 4 small carrots each) sliced in half, lengthwise
– 500 ml coconut milk
– 1 medium onion chopped
– 1/2 tsp turmeric
– 1/2 tsp curry
– olive oil
– a bunch of fresh parsley / toasted sesame seeds – for crunchiness
Saute the onion for 4-5 min in 5 -6 Tbsp of water.
Add all the ingredinets excepting the last two and let them boil for 15 min. Let it cool down. Blend. Love.
Add 1 Tbs of olive oil in your plate. Add in or decorate with fresh herbs and toasted sesame seeds.
Some may add dill.
